So I celebrated my birthday during lockdown and all the bakeries around my area were closed.
I am pretty sure many of us have spent our birthdays locked in our homes with almost no celebration.
I, being born with a sweet tooth, was very sad that I may even not get a single laddoo on my birthday but my sweet little sister came to my rescue and baked a beautiful and tasty cake out of thin air (I am saying this because she used almost no ingredients). Here, I would like to share her recipe so that you all can try at home and surprise your loved ones and perhaps yourself.

- Oreo biscuits – 5 pkts
- ENO – 1 sachet
- Milk – 1 cup
- Butter – 1 tbsp
- Dairy milk chocolate – 2 pkts (for decoration)
- Gems – 10 pc (for decoration)
- Perk chocolate – 2 pc (for decoration)
- Break the Oreo biscuits into small pieces (picture below)
- Put the broken biscuit pieces in the mixer and grind them (picture below)
- Put the mixer in the grinder again and pour 1 cup of milk and give it a whisk for 1-2 min until a smooth batter is formed.
- Now take the batter and pour it in a container (picture below)
- Add one sachet of ENO into the mixture (picture below)
- Place a heavy-bottomed pan on gas stove and take a rack and place it on the pan.
- Take a cake mould and place it on the rack and put the batter in the mould and cover it for 45 mins until it is baked.
- After 45 mins, take a knife and insert it inside the cake and if the knife comes out clean, wallah! your cake is ready. Remove the cake from the mould.
- Just don’t serve it immediately, leave it until it has cooled down.
- Decorate it as per your choice. My sister used dairy milk, perk and gems.
Cakes are special, they have always been. But this cake will always be so much more special to me. I am so grateful to my little sister for all the love she has showered on me and being kind enough to manage to bake a nice cake when all the shops are shut down. In the end, it’s all about the memories.
